Would you believe that I’ve never actually made a Cobb Loaf Dip before? Crazy I know. A couple of weekends ago I decided this was something I needed to rectify ASAP and the result was this AMAZING Bacon and Cheese Cobb Loaf Recipe!! I chose to try a Bacon and Cheese Cobb Loaf recipe that I found scribbled in the margins of an old recipe book – and after all, who doesn’t love bacon and cheese?! The beauty of this recipe is that it’s sooooo adaptable and you really add (or omit) whatever ingredients you like. Apart from a mild cheesy landslide which developed while the Cobb Loaf was in the oven, I’m pretty happy with how it turned out and my three taste testers also gave it a big tick of approval. This easy Bacon and Cheese Cobb Loaf is the perfect addition for when you are next entertaining, you might also like to serve it with these Beef and Vegetable Sausage Rolls, Mini Ham and Cheese Quiches or this Baileys Chocolate Ripple Cake too. Another thing which is great about this Bacon and Cheese Cobb Loaf recipe, is that you can also prepare it in advance and then simply pop it into the over an hour or so before you want to serve it – perfect if you are entertaining. Bacon and Cheese Cobb Loaf Recipe Total Time 1 hr 10 minsLine a tray with baking paper and preheat your oven to 190 degrees.Cut a circle on top of your Cobb Loaf and carefully remove the ‘lid’. Scoop out the soft bread inside the Cobb Loaf and set aside.Slice the bacon and spring onions into small pieces and place them into a frying pan and cook for 4 – 5 minutes or until the bacon has turned a golden brown colour. Remove from the heat and set aside.Place the softened cream cheese, sour cream and cream into the bowl of an electric mixer and on a medium speed, beat until combined.Add the grated cheeses as well as the cooked bacon and spring onions and a little salt and pepper to the bowl and stir through until combined.Spoon the dip mixture into the hollowed out Cobb Loaf before place the lid back on and cover the top with foil before placing onto the covered baking tray and into the oven to bake for 40 minutes.After 40 minutes, remove the foil and add the bread pieces to the tray.
