How to make Cinnamon Zucchini Cake with Cream Cheese Frosting: When starting to make this recipe, preheat your oven to 350 degrees and spray your 9×13 inch baking pan with nonstick cooking spray. Then, in a large mixing bowl, beat together the eggs, vegetable oil, apple sauce, sugar, brown sugar, and vanilla extract until everything is completely combined. Next, add in the flour, baking powder, baking soda, cinnamon, salt, and nutmeg and continue beating the batter together. Once all of those ingredients are combined, fold in the shredded zucchini and stir it until it is completely mixed into the batter. PRO TIP: Be sure to pour out any excess liquid from your zucchini after you shred it to make sure to get the right consistency, but there is no need to pat it dry. Now, pour the batter into the prepared 9×13 pan and bake it in the oven for 35-40 minutes or until you can stick a toothpick in it and it comes out clean. After the cake is done cooling prepare your frosting. Mix together the softened cream cheese, softened butter, powdered sugar, and vanilla extract.
